Mexico Paraiso

We’ve been big fans of the coffees coming out of Mexico the past few years and this organic Chiapas is no exception! Displaying bright and clean flavors to be expected with a high-quality washed process coffee, we find notes of orange and peach with a nice, sweet backbone reminiscent of brown sugar or caramel. A current in-house favorite!

From Red Fox Coffee Merchants (importer)- “Chiapas has a strong culture of organic production and cooperativism, but also more recently of incorporating new processes, planting new varieties, and making efforts to combine environmentally sound, yet profitable, coffee production with protection of important biosphere reserves. What our relationships in both regions offer are opportunities for larger high-end lots from single producers who work in conjunction with their communities to uplift the whole. Cafeco is about four years old and has been growth-focused both in terms of sourcing and community. Working in the very isolated pueblo of Nuevo Paraiso, they’ve focused on creating internal infrastructure that the community can use to massively increase productivity, starting with a warehouse and a large nursery where they distribute productive and leaf rust-resistant varieties to partner farmers at no cost. Currently, they’re working on installing their own dry mill (funded by price premiums) to strengthen the community as a whole and be able to service farmers who would otherwise have to travel far on limited roads. They’re always looking to develop relationships with smaller farmers on the outskirts of the community. They cup and sample every farmer’s output and have phenomenal quality control, which helps us build special or separated lots.”
