Unlike any traditional Sumatra, this anaerobic processed coffee from our friends at Red Goni importers displays explosive aromas and flavors reminiscent of cherry cordial, bright strawberry and notes of sweet banana bread. The anaerobic process is a new and exciting method that can transform coffees from ordinary to extraordinary. Anaerobic processing consists of fermenting the semi-washed coffee in vessels devoid of oxygen, which promotes the growth of bacterias like Lactobacillus (the bacteria found in yogurt, sour beers, kombucha and other consumables); this bacteria creates bold fruity flavors and a bright acidity that otherwise cannot be found in the coffee itself. We’re very fond of this coffee and this processing method in general; it creates a whole new world of flavor in coffee and is a great way for farmers to receive higher wages and payouts for their crops.
